Every Day Ingredients Vegetarian Patty

Are you looking for a very easy to make and tasty vegetarian patty recipe? This one may become a favorite. The every day ingredients in these patties are usually in your kitchen so it is a convenient recipe to put together.

Oatmeal Patties

1 cup Rolled Oats

1 cup Corn Flakes

1 Medium Onion

1 1/2 tablespoon Flour

1/4 cup Oil

2/3 cup Milk

2 Eggs

1 teaspoon Sage

Salt to taste

1 can Mushroom Soup

Saute onion until soft (or put them in the microwave). Combine all ingredients except the mushroom soup and mix well. Pour 1 - 2 Tablespoons of olive oil (just enough to coat the bottom) into a large frying pan. Spoon patty-sized portions into the pan and fry until firm and golden brown on the bottom. Turn the patties over and flatten with a spatula. Continue frying until the now bottom side is golden brown and the patty is completely cooked in the center. When patties are done, pour diluted mushroom soup over the top and simmer until the soup bubbles.

Serve with mashed potatoes, vegetables and a salad.

This is a real favorite meal with my family. I often add cooked rice to the mixture if I have some leftover from a previous meal. And as a bonus, the mushroom soup can be used as a gravy for the mashed potatoes. If you prefer you can bake the patties instead of frying them. Place the baked patties in a 9 x 9 pan and cover with the mushroom soup and bake until warm. I have also made this recipe with soy milk and with powdered egg replacement so if you are vegan you can modify it to work for you.

Makes 8 - 10 patties

Variations

1. Add a can of mushrooms to the soup

2. Overlap cooked patties in a baking dish and place a cooked slice of onion between each patty before covering with soup.

3. Use celery soup or brown gravy instead of mushroom soup.

Add finely chopped nuts

Replace the sage and salt with seasoned salt or any seasoning of your choice.
